Butchering Indexes Performance for Different Fattening Buffalo Slaughtering Categories According to Season
Abstract
The objective of this study is to establish different levels for slaughterhouse productive indexes and determine the effect of season and kind of livestock supplying enterprise on these indexes. To this end, 579 buffalos classified according to three fattening categories (first, second, and third) were shipped from a number of livestock centers in Cuba to be slaughtered and butchered at a specialized commercial slaughterhouse in Camagüey province. Data were assessed by an analysis of variance (ANOVA). Liveweight at shipment for the above mentioned fattening categories were 460 kg, 432 kg, and 359 kg, respectively. Hot carcass weight at shipping liveweight varied according to dry and rainy seasons, i.e., 222,6 kg and 249,5 kg for the first fattening category, 219 kg and 255 kg for the second fattening category, and 194 kg and 186 kg for the third fattening category, respectively. Hot carcass yield values ranged from 47 % to 55 % for the first category, from 53 % to 56 % for the second category, and reached 54 % for the third category. Season influenced shipping liveweight and hot carcass weight of the first fattening-buffalo category. The kind of buffalo supplying enterprise showed no significant influence on shipping liveweight, hot carcass weight, and hot carcass yield. Therefore, neither season nor the kind of the supplying enterprise affected hot carcass yield productive index.
